The renowned Equus Restaurant at Castle Hotel & Spa is offering a unique Sake Dinner Pairing to feature three superb examples of sake to complement innovative dishes designed by The Culinary Team at Equus. With the combined talents of Chef Yoshitaka Oyama of Japan and Chef Renier Schoeman of South Africa, the creative menu is a distinctive gourmet experience that blends masterfully with sake.

Although sake is often referred to as rice wine, it is produced by a brewing process more like that of beer. Sake brewing dates back to the 3rd century in Japan. Sake Samurai Timothy Sullivan, Founder of Urbansake.com, has paired three different kinds of sake to be featured with each of the three courses.

Paired with Appetizer
Signature Hakkaisan Junmai Ginjo, crisp and clean with a dry finish. A landmark example of the Niigata brewing style.

Paired with Entrèe
Tokubetsu Junmai. The signature ingredient of this sake is the fine local water giving a smooth taste and flavor.

Paired with Dessert
Sparkling Nigori. With a refreshing acidity and gorgeous aroma, Hakkaisan Sparkling Nigori is enjoyable when creatively paired with dessert.

With 15 years of culinary experience, Chef Yoshitaka Oyama joined the Culinary Team at Equus in 2012, having spend two years at Sankara Hotel & Spa, Yakushima in Japan. He studied classic French cuisine at École TUJI Tokyo and has honed his experience in some of the finest restaurants in France and Japan.

Chef Renier Schoeman, classically trained and educated in South Africa, has created culinary magic and received four- and five-star accolades for his accomplishments at Ritz-Carltons Hotels in Dubai and in Florida.

Their creative three-course dinner was created with deference to Castle Hotel & Spa’s Auberge Cuisine which incorporates the freshest ingredients available from the Hudson River Valley.

Wester Ross Salmon “A La Planche”
Spring Cabbage Purée, Herb Salad, Sherry Dressing

Maine Sea Scallops
Spring Green & Sugar Peas, Romaine Lettuce, Iberico and Mint

Long Island Duck Breast
Wheat Berry Risotto, Goat Cheese, Red Berries, Albufera Sauce

In 2007, Timothy Sullivan was named Sake Samurai by the Japan Sake Brewer’s Association in recognition of his ” love of sake and the desire to nurture it, to restore the pride of sake and to spread sake culture not only within Japan but throughout the world.” Tim is also an International Sake Sommelier, an Advanced Sake Professional, and Certified Sake Adviser.

The three-course dinner if offered at $95 plus applicable taxes and service charges and is available for a limited time only (from May 30 through June 22, 2014). Seatings are available from 6:00 to 9:00 PM.
